How to Make Appam
Mix 1 cup of Double Horse Appam mix with about 1 ½ cups hot water stir until lump-free. Let rest 5 10 minutes. (Adjust water for preferred softness.)
Grease appam pan/ladle lightly. Pour batter and swirl to form a thin edge with thicker center.
Cover and cook on medium heat until edges are set and center is soft (about 2 3 minutes).
Serve hot with coconut stew, vegetable stew, egg curry or sweetened coconut milk.
How to Make Idiyappam / Pathiri
Prepare dough: Mix the powder with boiling water and a pinch of salt to form a soft, pliable dough.
Fill idiyappam press or string hopper mould and press thin strands onto idli plates lined with parchment or into oiled moulds.
Steam for 7 10 minutes until cooked through.
Serve with coconut chutney, kurma, or sweetened coconut.
