In a mixing bowl, add 1 part Double Horse Easy Palappam Mix to 1.25 1.5 parts lukewarm water or thin coconut milk. (Example: 200g mix + 250 300ml liquid.)
Mix well until you get a smooth, slightly runny batter (no lumps).
Let the batter rest for 10 20 minutes at room temperature. (For a slightly tangier flavour, allow a short fermentation of 1 3 hours.)
Heat an appam pan (or non-stick skillet) on medium heat, add a few drops of oil, pour a ladle of batter and swirl to create a thin edge. Cover and cook until the centre is set.
Serve hot with stew, egg curry, or coconut chutney.
Tip: For richer flavour, replace part of the water with coconut milk. For crispier edges, use a hotter pan and a little extra oil around the rim.
