  4. Heat an appam pan (or non-stick skillet) on medium heat, add a few drops of oil, pour a ladle of batter and swirl to create a thin edge. Cover and cook until the centre is set.
  5. Serve hot with stew, egg curry, or coconut chutney.

Tip: For richer flavour, replace part of the water with coconut milk. For crispier edges, use a hotter pan and a little extra oil around the rim.
